I came home yesterday for the weekend,.and you know what that means- Good Eats! After getting off the train, I got to see my 2 year old niece and 4 year old nephew…ADORABLE! I got to take in some fresh-air while I watched my nephew’s flag football practice (so cute!).
This morning’s meditation sesh. was a nice change from my standard ones in Philly. It was SO quiet! I could actually hear the birds chirping, and even the faint chainsaw noise in the background was a pleasant change from the usual police sirens and next-door neighbor rap music. After meditating and doing a little yoga, I went to make breakfast.
For the first time in probably a year I made scrambled eggs. They turned out good, but the problem with eggs is that I can never eat them fast enough before they get cold. Anyways, I paired it with an apple (fresh from the orchard) and Toufayan whole grain pita smothered with Earth Balance spread. This was the first time I’ve tried this particular pita bread, and it was delicious. With 4 grams of fiber and 8 grams of protein per pita, it’s something I’ll definitely be eating again.
Well, I’m off to go take a hike and enjoy the beautiful countryside while I’m home! Stay tuned for some more good eats and probably some beautiful sites.
