The fruitiness and the sweetness of pomegranate juice makes it the perfect ingredient to lace slightly bitter arugula greens.
Pomegranate Vinaigrette:
-1/2 cup pomegranate juice
-1/4 cup brown rice vinegar
-2 tablespoons mustard
-3/4 cup extra virgin olive oil
-1/4 generous tsp. salt
-Fresh ground pepper, to taste
Whisk all the above ingredients together.
Salad
-1 part arugula to 1 part romaine lettuce
-3-4 sliced strawberries
-Crumbled feta or goat cheese, or diced tofu
-Fresh ground pepper, to taste
-Pomegranate dressing, to taste

May 25, 2010 at 12:24 pmThanks for the dressing recipe. I looks great. I love to make my own dressings. The last one I made had tahini in it, and I learned my lesson about letting something make it’s way to the back of the fridge. I had the hardest time getting the container clean. Oops!

May 27, 2010 at 10:27 pmThis sounds so wonderful! I made a pomegranate syrup with 2 cups of POM and 1 Tbsp maple syrup and you reduce it to 1/2 cup. I think that would work beautifully with something like this, too. But I’m mostly just saying that because I have the pomegranate syrup now and no more POM! 🙂
