Sometimes breakfast for dinner just feels right. Huevos rancheros is one of those breakfast-inspired dishes that I love eating once the sun goes down.
With plenty of leftover Beans ‘N Greens Burrito filling, I decided to use the extras for an interesting take on huevos rancheros. The results were more than delicious, possibly even surpassing the original Beans ‘N Greens Burrito dinner, creating another satisfying fiber and protein packed meal.
Beans ‘N Greens Huevos Rancheros
(Serves 1)
- -One slice whole grain bread
- -1/3 cup Beans ‘N Greens Burrito filling
- -1/4 cup medium salsa or other spiciness level of your desire
- -3-4 Tbsp. asiago cheese, grated
- -1 egg
- -Olive oil
- -Salt and pepper
- -1/4 avocado, sliced
Pop a piece of whole grain bread in the toaster. Meanwhile, reheat Beans ‘N Greens burrito filling along with approximately 3 tablespoons of salsa in a microwave or lightly oiled skillet.
While beans are heating up, place a small skillet over medium-high heat, and lightly grease with olive oil. Fry egg until desired doneness is achieved, sprinkling with salt and pepper.
Spread warm salsa over toasted slice of bread. Layer with heated Beans ‘N Greens mixture. Sprinkle cheese across the bread, and then top with egg. Serve alongside sliced avocado sprinkled with salt.
