Atlantic Tofu Gratin

Vegan comfort food can sometimes be hard to come by. Typical casseroles, pasta dishes, gratins, and many of the other standard foods that warm our tummies and bring us comfort are far too often loaded with milk, cream, and dairy. If you’ve ever eaten just one too many bites of mac & cheese, you know that this kind of cheesy food only brings short term comfort. (Also, read the China Study, and you might even feel a little sick before you start eating.)

Luckily, Horizons restaurant in Philadelphia knows how to cook up some serious comfort food, with absolutely no dairy involved. And with the help of their cookbook, I’ve been able to create my own vegan comfort food right in my own kitchen. Many of Horizons dishes, like the gratin below, are every bit as rich as their cream-filled counterparts. But there’s something about leaving out the dairy that makes them sit a little better in your stomach. Sometimes you just need a little rich goodness to really hit the spot. That’s how I was feeling when I decided to make a modified version of Horizon’s Atlantic Tofu Gratin.

Creamy, full of flavor, and even topped with a little “cheese” (non-dairy of course), this one really left me satisfied. Try putting this in the oven mid-morning and serving it with a slice of crusty bread for a hearty (and smoothie-less but spinach-filled!) weekend brunch.

Atlantic Tofu Gratin

Ingredients for Tofu Marinade
-1/4 cup olive oil
-1 small green pepper, chopped
-1 small onion, chopped
-1 large clove garlic, minced
-1 Tbsp. Old Bay seasoning
-1 small tomato, chopped
-1 lemon, juiced
-1 pinch curry powder
-1 tsp. dried thyme
-1 tsp. Dijon mustard
-2 Tbsp. sherry
-1/2 pound tofu, cubed

Ingredients for Dressing
-2 Tbsp. olive oil
-2 Tbsp. Dijon mustard
-1 Tbsp. vegan mayo
-1/2 tsp. sugar
-1/3 cup water

For the Gratin
-10 ounces spinach, washed and dried
-1/2 cup Daiya mozzarella

Preheat oven 450F. Combine all Tofu Marinade ingredients and place on baking sheet. Bake for 20 minutes, turning tofu with a spoon twice. Meanwhile, rapidly whisk Dressing ingredients until smooth.

Combine tofu mixture with spinach and place in baking dish. Cover mixture with dressing.

Bake on highest oven setting (500F) for 10 minutes, or until top is brown and bubbly. Remove from heat and sprinkle Daiya cheese on top. Finish gratin under the broiler, until cheese is melted and just beginning to brown, 2-5 minutes.

    This looks awesome as do most of your dishes. I’ve found in the last several years vegan dishes sit so much better in my stomach. Hence my (mostly) vegan diet. Also gotta get that Horizons book/go to the restaurant..
